Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with festive liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and a pinch of salt.
  3. In another bowl, mix sugar, vegetable oil, buttermilk, eggs, red food coloring, and vanilla until smooth.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting.
  7. For frosting, beat softened butter until creamy; gradually add powdered sugar and heavy cream until desired texture is reached. Mix in peppermint extract.
  8. Frost cooled cupcakes generously.
