  • 2 lbs baby back pork ribs
  • 24 oz high-quality sauerkraut (drained)
  • 1 medium onion (sliced)
  • 4 cloves garlic (minced)
  • 1 cup unsweetened apple juice
  • 2 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the ribs generously with salt and pepper. Optionally, rub with smoked paprika for extra flavor.
  3. In a large roasting pan, layer half of the sauerkraut on the bottom. Add sliced onions and minced garlic, then place the seasoned ribs on top.
  4. Pour apple juice over the ingredients for moisture and sweetness. Top with the remaining sauerkraut and sprinkle brown sugar.
  5. Cover tightly with aluminum foil and bake for about 3 hours until the ribs are tender.
  6. Remove foil during the last hour of baking to brown the ribs. Serve hot.
