  • 6 mini pumpkins (about 3 inches each)
  • 1 lb lean ground beef
  • 1 cup cooked rice
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup black olives, sliced (for eyes)
  • 1 packet taco seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the mini pumpkins and scoop out the seeds.
  3. In a bowl, mix ground beef, cooked rice, taco seasoning, and cheddar cheese until well combined.
  4. Stuff each pumpkin generously with the mixture, pressing down slightly.
  5. Add two slices of black olives to each pumpkin as spooky eyes.
  6. Place on a baking sheet and bake for 25–30 minutes until tender. Serve warm.
