  • 2 cloves fresh garlic (minced)
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 2 cups fresh spinach
  • 12 oz potato gnocchi
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a large pot over medium heat. Drizzle with olive oil, season chicken breasts with salt and pepper, and sear for 5-7 minutes on each side until golden brown. Remove and set aside.
  2. In the same pot, sauté chopped onions, garlic, carrots, and celery for about 5 minutes until softened.
  3. Pour in the chicken broth while scraping any bits from the bottom of the pot. Bring to a gentle boil.
  4. Return the seared chicken to the pot along with fresh spinach. Simmer for about 10 minutes until the chicken is fully cooked.
  5. Stir in the gnocchi and cook for an additional 3 minutes until they float to the surface.
  6. Finally, add heavy cream and stir gently to combine. Adjust seasoning as necessary before serving hot.
