  • 1 whole turkey (1214 pounds)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • Zest of 2 lemons

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove giblets from the turkey cavity and pat the turkey dry with paper towels.
  3. In a bowl, mix olive oil, minced garlic, chopped herbs, salt, and pepper. Rub this mixture generously over the turkey, including under the skin.
  4. Zest the lemons into the herb mixture and squeeze their juice over the turkey for extra moisture.
  5. Place the turkey breast-side up on a rack in a roasting pan and roast for approximately 13-15 minutes per pound until the internal temperature reaches at least 165°F (75°C).
  6. Let the turkey rest for at least 30 minutes before carving to allow juices to redistribute.
