  • 34 pounds beef chuck roast
  • 4 medium carrots, cut into thick chunks
  • 1.5 pounds Yukon Gold potatoes, quartered
  • 2 large sweet onions, quartered
  • 2 cups low-sodium beef broth
  • 4 cloves fresh garlic, minced
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by chopping the carrots and quartering the onions.
  2. Sear the beef chuck roast in a hot skillet until browned on all sides.
