  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups enchilada sauce
  • ½ cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, heat 2 tsp olive oil and cook seasoned chicken breasts until golden brown (6-7 minutes per side). Ensure internal temperature reaches 165°F (74°C) before removing and shredding the chicken.
  3. Lay tortillas flat, fill with shredded chicken and a sprinkle of both cheeses. Roll tightly and place seam-side down in the baking dish.
