  • 2 tbsp extra virgin olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 cup mixed bell peppers (green and red), diced
  • 28 oz can diced tomatoes with juice
  • 15 oz can kidney beans, rinsed and drained
  • 15 oz can black beans, rinsed and drained
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
  2. Increase heat to medium-high; add diced steak, seasoning with salt and pepper. Brown on all sides.
  3. Stir in minced garlic, chili powder, and cumin; cook for 1 minute until fragrant.
  4. Add diced tomatoes and both types of beans. Stir well to combine.
  5. Reduce heat to low and let simmer uncovered for at least 1 hour, stirring occasionally.
