  • 8 oz fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 8 oz fresh mozzarella balls, halved
  • ½ cup red onion, thinly sliced
  • ½ cup fresh basil leaves, torn
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the fusilli pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cools, prepare the cherry tomatoes, cucumber, red onion, and basil.
  3. In a large bowl, combine the cooled pasta with cherry tomatoes, cucumber, mozzarella balls, red onion, and basil. Toss gently.
  4. In a small bowl, whisk together olive oil and balsamic vinegar. Season with salt and pepper.
  5. Pour the dressing over the salad mixture and toss to coat evenly.
  6. Chill in the refrigerator for at least 30 minutes before serving.
