  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 2 tsp freshly cracked black pepper
  • 8 oz pasta of your choice (fusilli recommended)
  • 1 jar (12 oz) roasted red peppers
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt, lemon juice, lemon zest, and black pepper. Place on the baking sheet.
  3. Bake for 20-25 minutes until cooked through and golden brown.
  4. Cook pasta according to package instructions until al dente; reserve 1/2 cup pasta water before draining.
  5. In a blender, combine roasted red peppers, heavy cream, Cajun seasoning, and reserved pasta water; blend until smooth.
  6. Toss cooked pasta with the sauce and sliced chicken pieces. Serve warm.
