  • 4 beef marrow bones (cut lengthwise)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 4 sprigs fresh thyme
  • 1 lemon (zested and juiced)
  • 4 slices crusty sourdough bread

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Place marrow bones cut-side up on a parchment-lined baking tray. Drizzle with olive oil and sprinkle with sea salt. Tuck thyme sprigs between the bones.
  3. Roast in the oven for 15-20 minutes until bubbly and slightly pulling away from the sides.
  4. Slice sourdough into thick pieces, drizzle with olive oil, and toast in the oven during the last 5 minutes until golden brown.
  5. In a small bowl, combine lemon zest, half the lemon juice, and chopped thyme.
