  • 1 cup shredded cheddar cheese (or feta/mozzarella)
  • ¼ cup olive oil
  • 2 tbsp vinegar (red wine or apple cider)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water until cool.
  2. While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion into small pieces. Set aside.
  3. In a large bowl, combine cooled pasta with the chopped vegetables and black olives; mix gently.
  4. In a separate bowl, whisk together olive oil, vinegar, Italian seasoning, salt, and pepper until combined. Adjust seasoning if needed.
  5. Pour the dressing over the pasta mixture and stir until well coated; add shredded cheese last to distribute evenly.
