  • 1 medium red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients on a clean cutting board.
  2. Dice the red bell pepper and halve the cherry tomatoes. Chop the avocado into bite-sized pieces.
  3. In a large bowl, combine black beans, sweet corn, diced red bell pepper, halved cherry tomatoes, chopped avocado, and cilantro. Toss gently to avoid mashing the avocado.
  4. In a small bowl, whisk together lime juice and olive oil. Pour over the mixture and fold gently until everything is coated.
  5. Season with salt and pepper to taste. For extra spice, add diced jalapeños if desired.
  6. Cover and chill in the refrigerator for at least an hour before serving.
