Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch pieces
  • 4 large carrots, chopped into thick chunks
  • 3 medium Yukon Gold potatoes, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil (for browning)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown beef on all sides for about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté onions until golden brown (about 5 minutes). Add garlic for the last minute to avoid burning.
  3. Return beef to the pot with carrots and potatoes; stir to combine.
  4. Pour in beef broth to cover ingredients. Sprinkle thyme on top.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for at least 2 hours, stirring occasionally.
  6. Taste before serving; adjust seasoning as needed. Serve hot with crusty bread.
