  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tbsp fresh ginger, minced
  • 3 scallions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp brown sugar

Instructions

  1. Press the tofu between two plates with a weight on top for 15 minutes to remove excess moisture. Cut into bite-sized cubes.
  2. Toss tofu cubes in cornstarch until evenly coated.
  3. Heat vegetable oil in a non-stick skillet over medium-high heat.
  4. Fry tofu cubes in batches until golden brown on all sides (about 10-15 minutes).
  5. In a bowl, mix ginger, scallions, soy sauce, sesame oil, rice vinegar, and brown sugar for the sauce.
  6. Once tofu is crispy, drain on paper towels and drizzle with the ginger-scallion sauce before serving.
