Ingredients

  • 4 cups fresh kale leaves, chopped
  • 1 cup quinoa, rinsed
  • 2 cups butternut squash, peeled and cubed
  • 3 tbsp extra virgin olive oil
  • 1 tbsp maple syrup
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss butternut squash with 2 tbsp olive oil, maple syrup, salt, and pepper in a bowl. Spread on the baking sheet.
  3. Roast for 25-30 minutes until tender and golden brown.
  4. In a saucepan, bring 2 cups water to boil. Add rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes until fluffy.
  5. In a large bowl, massage chopped kale with remaining olive oil and lemon juice until softened.
  6. Once roasted squash and cooked quinoa are ready, combine them in the bowl with kale. Toss gently to mix.
