  • 9 oz fresh or frozen cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 2 cups arugula
  • 1/2 cup basil pesto
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup toasted pine nuts

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente (about 3-5 minutes). Drain and reserve 1/2 cup of pasta water.
  2. While the tortellini cooks, wash and halve the cherry tomatoes and rinse the arugula.
  3. In a large bowl, combine cooked tortellini, cherry tomatoes, arugula, Parmesan cheese, and pine nuts.
  4. Add basil pesto and toss gently to coat. If needed, add reserved pasta water one tablespoon at a time for desired consistency.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
