  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium red onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp chili powder (adjust to taste)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by peeling and dicing the sweet potatoes, chopping the onion and bell peppers, and mincing the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté the chopped onion and bell peppers until softened (about 5 minutes).
  3. Add minced garlic and diced sweet potatoes; cook for an additional 2 minutes.
  4. Stir in chili powder, salt, pepper, canned tomatoes (with juice), and vegetable broth.
  5. Bring to a gentle boil; reduce heat to low and cover. Simmer for about 20 minutes or until sweet potatoes are tender.
