  • 8 oz fusilli or penne pasta
  • 2 cups fresh corn kernels (about 3 ears)
  • 2 cups fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 1/3 cup extra virgin olive oil
  • 3 cloves garlic
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain, reserving some pasta water.
  2. If using fresh corn, cut the kernels off the cob. Alternatively, drain canned or thaw frozen corn.
  3. In a food processor, blend basil leaves, pine nuts, garlic, Parmesan cheese, olive oil, and a pinch of salt until smooth. Add reserved pasta water for desired consistency.
  4. In a large bowl, combine cooked pasta and corn with pesto sauce. Toss gently to coat.
  5. Season with salt and pepper as needed. Serve garnished with extra Parmesan cheese and fresh basil.
