  • 1 cup fresh blueberries
  • 1/3 cup brown sugar (for the streusel topping)
  • 1/2 tsp cinnamon (for the streusel topping)
  • 1/3 cup old-fashioned oats (for the streusel topping)
  • 2 tbsp melted butter (for the streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla; mix until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients until just combined.
  4. Gently fold in fresh blueberries without mashing them.
  5. In a small bowl, mix together brown sugar, oats, cinnamon, and melted butter for the streusel topping until crumbly.
  6. Scoop tablespoons of dough onto the prepared baking sheet and sprinkle streusel over each mound.
  7. Bake for about 12-15 minutes or until golden brown around the edges. Let cool slightly before enjoying.
