Chicken enchilada dip is a creamy, cheesy appetizer that brings a fiesta to your table.   • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup enchilada sauce
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • ¼ cup sliced jalapeños (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. In a medium pot, boil water and cook the chicken breasts until no longer pink (about 15-20 minutes). Shred the cooked chicken.
  3. In a large mixing bowl, combine shredded chicken, softened cream cheese, 1 cup of cheddar cheese, enchilada sauce, minced garlic, salt, and pepper. Mix thoroughly.
  4. Transfer the mixture to the prepared baking dish and sprinkle with remaining cheddar cheese. Bake for 20-25 minutes until bubbly and golden brown.
