  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 jar (12 oz) roasted red peppers, drained
  • ¼ cup tahini
  • 2 garlic cloves
  • 2 tbsp lemon juice
  • 3 tbsp olive oil, plus extra for garnish
  • ½ tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas under cold water.
  2. In a food processor, blend chickpeas, roasted red peppers, tahini, garlic, lemon juice, cumin, salt, and pepper until smooth.
  3. With the processor running, slowly drizzle in olive oil until creamy.
  4. If needed, add cold water one tablespoon at a time to adjust the consistency.
  5. Taste and adjust seasoning before serving.
  6. Transfer to a bowl; drizzle with olive oil and garnish as desired.
