  • 1 can (5 oz) high-quality tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds. Trim the bottoms slightly if needed for stability.
  3. In a bowl, combine drained tuna, halved cherry tomatoes, diced red onion, crumbled feta cheese, chopped parsley, and lemon juice. Season with salt and pepper; mix well.
  4. Generously stuff each pepper with the tuna mixture.
  5. Place stuffed peppers in a baking dish and drizzle with olive oil. Cover with foil and bake for about 25 minutes. Remove foil for the last 5 minutes to brown the tops.
