Roasted Carrot Hummus is a deliciously unique twist on the classic dip, combining the natural sweetness of roasted carrots with creamy tahini, zesty lemon, and aromatic garlic. Ingredients

  • 4 medium carrots (about 400g), peeled and chopped
  • 3 whole garlic cloves
  • 1/4 cup tahini (60g)
  • 2 tbsp fresh lemon juice (30ml)
  • 3 tbsp extra virgin olive oil (45ml)
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread chopped carrots on a parchment-lined baking sheet, drizzle with 1 tablespoon olive oil, sprinkle with salt, and toss. Roast for 25-30 minutes until tender.
  3. Wrap garlic cloves in foil with a drizzle of olive oil and roast alongside the carrots for the last 15 minutes.
  4. In a food processor, combine roasted carrots, garlic, tahini, lemon juice, remaining olive oil, and salt. Blend until smooth.
  5. Taste and adjust seasoning if needed. Serve immediately or store in an airtight container in the fridge for up to five days.
