Stuffed zucchini boats are a colorful and flavorful summer dish that perfectly combines fresh ingredients with Mediterranean flair. Tender zucchini halves cradle a hearty mix of ground meat, aromatic spices, and gooey cheese, all baked to perfection.   • 2 large zucchinis
  • 1 lb ground beef (or turkey/chicken)
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese (or parmesan)

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Halve the zucchinis lengthwise and scoop out the flesh, leaving a quarter-inch border. Reserve the scooped-out flesh.
  3. In a skillet over medium heat, add olive oil and sauté onions and garlic until soft. Add ground meat and cook until browned.
  4. Stir in reserved zucchini flesh, tomato sauce, and seasonings until heated through.
  5. Fill zucchini halves with the meat mixture and top with cheese.
  6. Bake for 25-30 minutes until zucchinis are tender and cheese is golden.
