Cooking Instructions

  • Sear Salmon: Heat olive oil in a skillet over medium-high heat. Season the salmon fillet with salt and pepper, then sear flesh-side down for 5 minutes until golden brown. Flip and cook another 5 minutes until cooked through; remove and set aside.
  • Make Sauce: In the same skillet, melt the butter with the remaining juices. Add diced garlic and sauté for 1 minute until fragrant. Stir in minced onion and cook until softened, about 3 minutes.
  • Add Wine (optional): Pour in white wine to deglaze the pan, scraping any bits stuck on the bottom. Let it reduce for about 2 minutes.
  • Incorporate Ingredients: Stir in the sun-dried tomatoes, then lower the heat and add half-and-half. Bring to a gentle simmer, allowing the flavors to meld together nicely.
  • Finish Sauce: Add spinach and stir until wilted, around 2 minutes. Gradually mix in parmesan until melted and creamy, using cornstarch if a thicker sauce is desired.
  • Combine & Serve: Return the salmon to the pan, spoon the sauce generously over the top, and serve with your choice of pasta, rice, or steamed vegetables for a complete meal.

Notes
