Preparation Steps
- Season the diced chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat, then cook the chicken until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, melt the butter. Sauté the minced garlic until fragrant, about 30 seconds. Then, whisk in the flour to form a roux.
- Gradually pour in the chicken broth and heavy cream, whisking to achieve a smooth consistency. Cook until the mixture thickens, about 3-5 minutes.
- Stir in the grated Parmesan, sun-dried tomatoes, paprika, and Italian seasoning. Combine well until the flavors meld.
- Return the cooked chicken to the skillet, cooking until tender, about 5 more minutes. Meanwhile, cook penne pasta al dente according to package instructions; then mix it with the sauce.
- Toss everything together over low heat for a minute or so. Garnish with fresh basil and serve hot.
