Ingredients
  

For the Crust

  • 1 cups Graham Crackers For gluten-free, substitute with almond flour mixed with 2 tbsp sugar.
  • 2 tbsp Sugar
  • 1/2 cups Unsalted Butter Melted.

For the Filling

  • 8 oz Cream Cheese Room temperature.
  • 15 oz Ricotta Cheese For dairy-free, try strained almond milk ricotta.
  • 3 large Eggs
  • 1 tsp Vanilla Extract
  • 1 cups Mini Chocolate Chips Mini chips won't sink.

Preparation

  • Prepare the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter until it's the texture of wet sand. Press this mixture firmly into the bottom of a lined pan, extending slightly up the sides.
  • Mix filling: In a large mixing bowl, beat room-temperature cream cheese and sugar together until smooth. Gradually add the eggs, one at a time, ensuring to mix completely after each addition. Fold in the ricotta, vanilla extract, and mini chocolate chips gently to avoid lumps.
  • Bake: Carefully pour the creamy filling over the prepared crust and place it in a preheated oven at 325°F. Bake for 40-45 minutes, or until the edges are set and the center has a slight jiggle but isn’t runny.
  • Cool down: Once baked, let the dessert cool at room temperature for about 1 hour. Then, cover and refrigerate for at least 4 hours, preferably overnight.
  • Serve: Dust the top with powdered sugar before slicing into bars. Optional toppings like chocolate chips or a sprinkle of orange zest can add a delightful finishing touch!
