Cooking Instructions

  • Preheat your oven to 325°F (163°C).
  • In a Dutch oven over medium-high heat, add olive oil and sear the short ribs until golden brown on all sides, about 8-10 minutes. Remove and set aside.
  • In the same pot, add diced onion, carrots, and minced garlic. Sauté until softened, about 5 minutes.
  • Pour in the red wine and scrape any browned bits. Let simmer for 2-3 minutes.
  • Place the seared ribs back into the pot with beef broth, thyme, and bay leaves. Cover and braise in the oven for 2.5 to 3 hours.
  • After braising, skim excess fat. If a thicker sauce is desired, mix cornstarch with water and stir into the pot.
  • Let the ribs rest for a few minutes before serving.
