For the Pasta

  • 8 ounces Dry Pasta Fusilli or penne works best.
  • 2 cups Beef Broth Use vegetable broth for a vegetarian option.
  • 1 cup Water Balances the broth.

For the Creamy Finish

  • 1 cup Heavy Cream Half-and-half is a lighter substitute.
  • 1 cup Shredded Gruyère Cheese Consider using a mix of cheeses.
  • 1/4 cup Grated Parmesan Cheese Optional but recommended for garnish.

For Garnish

  • 2 tablespoons Fresh Parsley Adds color and freshness.

Cooking Steps

  • Melt butter and olive oil in your Instant Pot on the sauté setting. Add the thinly sliced onions, salt, pepper, and sugar. Cook for 15-20 minutes, stirring occasionally, until the onions are deeply caramelized and golden brown.
  • Stir in minced garlic and cook for about 1 minute. Then, pour in the balsamic vinegar and sprinkle in the thyme, mixing well to combine.
  • Add the dry pasta along with beef broth and water. Secure the lid, set the pressure valve to sealing, and cook on high pressure for 4 minutes. Quick-release the pressure when done.
  • Open the lid once the pressure is released. Stir in the heavy cream, Gruyère cheese, and Parmesan cheese until everything is melted and beautifully creamy.
  • Serve your Instant Pot French Onion Pasta in bowls, garnishing with fresh parsley and more Parmesan if desired.
