Preparation Steps
Preheat the oven to 400°F (200°C).
Cook the rigatoni pasta in a large pot of salted boiling water until al dente, usually about 8-10 minutes. Drain, but reserve 1/4 cup of the pasta water for later use.
Assemble the dish by placing the Boursin cheese in the center of a baking dish. Surround it with halved cherry tomatoes and minced garlic, then drizzle everything generously with olive oil.
Roast the mixture in the oven for about 20 minutes until the tomatoes blister and the cheese becomes soft and creamy.
Mix the melted cheese with the tomatoes and garlic until smooth. If too thick, stir in heavy cream and reserved pasta water.
Combine the cooked pasta with the cheese mixture, ensuring even coating.
Top the dish with grated parmesan cheese and bake for another 10-15 minutes until bubbly and golden.
Garnish with fresh chopped parsley or basil just before serving.
