For the Pasta

  • 12 oz Rigatoni Pasta or any short tube-shaped pasta like penne

For the Sauce

  • 8 oz Boursin Garlic & Fine Herbs Cheese can substitute with Shallot & Chive
  • 1 cup Heavy Cream
  • 3 cloves Garlic freshly minced

For the Toppings

  • 1 cup Cherry Tomatoes or chopped Roma or vine tomatoes
  • 2 tbsp Olive Oil
  • 1 cup Parmesan Cheese grated
  • 1/4 cup Fresh Parsley or Basil for garnish

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • Cook the rigatoni pasta in a large pot of salted boiling water until al dente, usually about 8-10 minutes. Drain, but reserve 1/4 cup of the pasta water for later use.
  • Assemble the dish by placing the Boursin cheese in the center of a baking dish. Surround it with halved cherry tomatoes and minced garlic, then drizzle everything generously with olive oil.
  • Roast the mixture in the oven for about 20 minutes until the tomatoes blister and the cheese becomes soft and creamy.
  • Mix the melted cheese with the tomatoes and garlic until smooth. If too thick, stir in heavy cream and reserved pasta water.
  • Combine the cooked pasta with the cheese mixture, ensuring even coating.
  • Top the dish with grated parmesan cheese and bake for another 10-15 minutes until bubbly and golden.
  • Garnish with fresh chopped parsley or basil just before serving.

Notes

Serve with a side of garlic bread for an extra crunch.
