Preparation

  • Heat oil: Warm olive oil in a skillet over medium-high heat, ensuring it's hot enough to sizzle when the chicken hits the pan.
  • Season chicken: Sprinkle the chicken pieces with smoked paprika, garlic powder, onion powder, salt, and black pepper. Cook for 8–10 minutes, stirring occasionally, until golden brown and fully cooked.
  • Mix sauce: In a small bowl, combine honey and hot sauce. Pour this mixture over the cooked chicken, tossing to coat evenly.
  • Prepare dipping sauce: In a separate bowl, mix together sour cream, chopped jalapeños, lime juice, garlic powder, and a pinch of salt. Refrigerate until ready to serve.
  • Assemble quesadillas: Layer a tortilla with cheese, honey-coated chicken, and more cheese, then top with another tortilla.
  • Cook quesadillas: In the same skillet, melt butter and cook the assembled quesadilla for 2–3 minutes per side until golden brown and crispy.
  • Cut and serve: Slice the quesadilla into wedges and serve warm with the chilled jalapeño cream sauce on the side, garnished with fresh cilantro if desired.
