How to Make Italian Sausage Pasta Soup

  • Heat olive oil in a large pot over medium-high heat. Add Italian sausage, breaking it apart as it cooks, until no pink remains—about 5-7 minutes. Remove the sausage and set aside.
  • In the same pot, add chopped onion, minced garlic, diced carrots, and chopped celery. Sauté for 5-7 minutes until they’re tender and aromatic.
  • Sprinkle in oregano, basil, and red pepper flakes. Stir everything together and cook for an additional minute to release those wonderful aromas.
  • Pour in the diced tomatoes with their juice and broth. Bring the mixture to a boil, watching for those lovely bubbles to form.
  • Stir in your uncooked pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  • Return the cooked sausage to the pot, and add fresh spinach. Cook for another 2-3 minutes, until the spinach has wilted beautifully.
  • Taste and adjust seasonings with salt and pepper. Ladle the soup into bowls and garnish with fresh basil or parsley and a sprinkle of Parmesan cheese if desired.

Notes
