  • Begin by chopping the cauliflower into small florets. Steam them until tender, about 5-7 minutes, to ensure they blend smoothly into the soup.
  • In a large pot, cook the bacon over medium heat until crispy, about 4-5 minutes. Drain the excess fat and then add minced garlic, sautéing until fragrant, about 1 minute.
  • Stir in the steamed cauliflower and chicken broth, bringing the mixture to a simmer. Let it cook for about 10 minutes to allow all the flavors to meld together.
  • Use an immersion blender to puree the soup until smooth and creamy. Stir in the cream cheese and blend until fully melted and incorporated.
  • Add the cheddar cheese into the pot and stir until melted. Season with salt and pepper to taste. Serve hot, garnished with chopped green onions.
