Ingredients
  

For the Chicken

  • 1 pound Chicken Breasts can substitute with shrimp or tofu
  • 2 tablespoons Cornstarch
  • 3 tablespoons Soy Sauce use low-sodium if preferred
  • 1 tablespoon Sesame Oil or vegetable oil
  • 1/2 teaspoon Black Pepper adjust to taste

For the Peanut Sauce

  • 1/2 cup Creamy Peanut Butter unsweetened preferred
  • 1/4 cup Warm Water
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 2 tablespoons Honey or maple syrup for vegan option
  • 2 tablespoons Lime Juice
  • 1 tablespoon Fresh Ginger grated
  • 2 cloves Garlic minced
  • 1 tablespoon Sriracha adjust to heat preference
  • 1 tablespoon Sesame Oil

For the Noodles and Veggies

  • 8 ounces Linguine or Spaghetti Noodles or rice noodles/udon
  • 2 tablespoons Vegetable Oil any neutral oil
  • 1 cup Red Bell Pepper sliced
  • 1 cup Broccoli cut into florets
  • 1 cup Shredded Carrots

For Garnish (Optional)

  • 1/4 cup Chopped Peanuts
  • 1/4 cup Fresh Cilantro

Cooking Instructions

  • Toss diced chicken with cornstarch, soy sauce, sesame oil, and black pepper; let it sit for at least 10 minutes to absorb the flavors.
  • Whisk together creamy peanut butter, warm water, soy sauce, rice vinegar, honey or maple syrup, lime juice, ginger, garlic, Sriracha, and sesame oil until smooth. Taste and adjust as needed.
  • Bring a pot of salted water to a boil, then add the noodles and cook until al dente, about 8-10 minutes. Drain and set aside.
  • Heat vegetable oil in a skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, or until browned all over. Remove the chicken and set aside.
  • In the same skillet, stir-fry red bell pepper and broccoli for 3-5 minutes until they start to soften. Add the shredded carrots and cook for an additional 1-2 minutes until heated through.
  • Return the cooked chicken to the skillet, add the drained noodles and peanut sauce. Toss everything together gently until coated, then heat through for 1-2 minutes.
  • Plate your Thai Peanut Chicken Noodles and garnish with chopped peanuts and fresh cilantro. Serve with lime wedges for an added burst of flavor.

Notes

Allow the chicken to marinate for at least 10 minutes for enhanced flavor. Customize with seasonal vegetables as desired.
