Ingredients
  

For the Chicken

  • 2 pieces Chicken Breasts thinly pounded
  • 1/2 cup Flour seasoned with salt and pepper
  • to taste Salt
  • to taste Pepper

For the Sauce

  • 2 tablespoons Olive Oil
  • 2 tablespoons Butter
  • 8 ounces Mushrooms fresh cremini or button
  • 1 medium Shallot sliced
  • 2 cloves Garlic minced
  • 1 cup Marsala Wine dry
  • 1 cup Chicken Broth
  • 1/4 cup Heavy Cream optional

Garnish

  • 2 tablespoons Fresh Parsley chopped

Steps

  • Prepare chicken by pounding to about half an inch thick and seasoning flour with salt and pepper.
  • Dredge each chicken piece in the seasoned flour, shaking off excess.
  • Cook chicken in a skillet with olive oil and butter over medium heat for 3-4 minutes on each side until golden brown.
  • Sauté sliced mushrooms and shallots in the same skillet for 5-7 minutes.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Deglaze with Marsala wine and reduce by half for about 5 minutes.
  • Add chicken broth, bring to a gentle simmer, and return chicken to the pan, simmering for an additional 5-10 minutes.
  • If using, stir in heavy cream and heat through without boiling.
  • Plate chicken and spoon the sauce over it, garnishing with fresh parsley.

Notes

Optional to serve with creamy mashed potatoes or buttered egg noodles to soak up the sauce.
