How to Make Persimmon Jam

  • Peel, chop, and discard the seeds of your ripe persimmons to get about 1½ cups of chopped fruit.
  • Blend the chopped persimmons in a food processor until smooth.
  • In a medium saucepan, mix the persimmon puree with granulated sugar and bring to a gentle boil over medium heat for 15 minutes.
  • Whisk cornstarch with water until fully dissolved, then add this slurry and lemon juice to the boiling mixture. Continue to boil for another 15 minutes.
  • Let the jam cool to room temperature, then pour it into sterilized jars for storage.

Notes

Serve with a sprinkle of lemon zest for extra flavor. Store jars in the fridge or pantry depending on whether they are opened or unopened.
