Preparation

  • In a large mixing bowl, combine the shredded chicken and basil pesto. Add baby spinach leaves, sun-dried tomatoes, mozzarella, parmesan, salt, and pepper. Mix until everything is well incorporated and vibrant.
  • Start by laying a tortilla flat on a clean surface. Spoon about 1/4 of the filling down the center, leaving a 2-inch border on each side for folding.
  • Carefully fold the sides of the tortilla over the filling, then roll from the bottom up, enclosing the filling securely. Repeat with the remaining tortillas.
  • Heat a drizzle of olive oil in a skillet over medium heat. Place the wraps seam-side down in the skillet and grill for about 2-3 minutes, until golden brown and crispy.
  • Slice the wraps in half and serve immediately, perhaps with extra pesto or a side salad for a refreshing touch.
