How to Make Fave Authentic Birria Tacos

  • Soak the dried guajillo and ancho chiles in hot water for about 15 minutes until they soften.
  • Blend the softened chiles with your preferred seasonings until smooth, then place in a large pot with the beef and braise on low heat for 2-3 hours.
  • Shred the braised beef with a fork and mix it with the melted Oaxacan cheese.
  • Warm the corn tortillas in a dry skillet, fill each with the beef and cheese mixture, and fold.
  • Pan-fry the tacos in the skillet with a touch of oil until crispy and golden brown on both sides.
  • Serve hot with a small bowl of consomé for dipping.

Notes

Feel free to add fresh cilantro and lime for a burst of freshness. Experiment with toppings like diced avocado and fresh herbs.
