For the Tomato Mixture

  • 2 cups Cherry Tomatoes Slice to release juices.

For the Topping

Cooking Instructions

  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Heat olive oil in a skillet over medium-high heat. Once shimmering, add the chicken and sear for 5-7 minutes per side until golden brown.
  • Sauté halved cherry tomatoes in the same skillet for 3-4 minutes until softened.
  • Reduce heat, return chicken to skillet, and add mozzarella and half of the basil.
  • Drizzle with balsamic glaze and lemon juice, toss to combine.
  • Serve topped with remaining basil.
