How to Make Instant Pot French Onion Chicken Thighs

  • Pat the chicken thighs dry with paper towels and season with kosher salt and black pepper. Let them rest for 10 minutes.
  • Set Instant Pot to sauté, melt unsalted butter, and add sliced yellow onions with a pinch of salt. Cook for 20-25 minutes until caramelized.
  • Stir in Dijon mustard and chicken broth into the caramelized onions. Add thyme and bay leaf, scraping browned bits from the pot.
  • Nestle chicken thighs skin-side up into onion mixture. Secure lid and cook on high pressure for 10 minutes. Allow natural release for 5 minutes before quick release.
  • Remove chicken from the pot and let rest for 5 minutes. Garnish with chopped parsley before serving.
