  • 1 cup Shredded Sharp Cheddar Cheese substitute with favorite cheese blend
  • 1 cup Panko Breadcrumbs use gluten-free if needed
  • 1 Eggs no substitutes recommended
  • 1 tsp Onion Powder fresh minced onion is a good alternative
  • 1 tsp Seasoned Salt adjust according to preference

Cooking Instructions

  • Preheat the oven to 425°F (220°C).
  • Cook the bacon in a skillet over medium heat until crispy. Crumble it and set aside.
  • Combine all the meatloaf ingredients in a large mixing bowl, except for the BBQ sauce. Mix gently.
  • Shape the mixture into 8 mini loaves, pressing slightly to flatten.
  • Glaze each loaf generously with BBQ sauce.
  • Bake the mini loaves for about 25 minutes, or until firm to the touch.
  • Broil on high for an additional 2-5 minutes for perfect caramelization.
  • Rest the mini meatloaves for 5 minutes before serving.
