Preparation

  • Blanch Cabbage Leaves: Bring a pot of water to a boil and prepare an ice bath. Blanch the cabbage leaves for 1-2 minutes until they turn bright green, then quickly transfer them to the ice bath to stop the cooking process.
  • Prepare Filling: In a large skillet, heat olive oil over medium heat. Sauté the shallots for about 3-4 minutes until softened, then add garlic and ginger, cooking until fragrant. Add the ground pork and cook until browned, then mix in the carrot, fish sauce, tamari, green onions, and cilantro, stirring until well combined.
  • Prepare Cabbage Rolls: Take a blanched cabbage leaf and cut a V-shape at its base to make it easier to roll. Place 2-3 spoonfuls of the filling near the base of the leaf, then roll it tightly while tucking in the sides, creating a neat roll.
  • Bake: Preheat your oven to 350°F (175°C). Place the cabbage rolls seam-side down in a baking dish. Drizzle the dipping sauce mixture over the rolls and bake uncovered for 15-20 minutes until they are tender and the flavors meld together.
  • Optional: Serve with a drizzle of extra dipping sauce for added flavor.

Notes

For meal prep, assemble the rolls and store them unfrozen in the fridge for up to 3 days. Bake when ready.
