Ingredients

  • 4 medium Sweet Potatoes peeled and chopped
  • 2 tablespoons Extra Virgin Olive Oil can substitute with vegetable oil

For the Honey Glaze

  • 2 tablespoons Melted Butter can be swapped with margarine
  • 1/4 cup Honey local honey preferred
  • 1 tablespoon Lemon (Juice and Zest) fresh lemon is ideal

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Peel the sweet potatoes and chop them into bite-sized pieces. Toss with a pinch of salt.
  • In a small saucepan, melt the butter and olive oil over medium heat. Stir in lemon juice, lemon zest, and honey, simmering for about 1 minute.
  • Pour the honey-lemon mixture over the sweet potatoes, ensuring they are coated.
  • Spread the sweet potatoes evenly on a parchment-lined baking sheet and roast for about 25 minutes until tender.
  • Let cool slightly and serve warm.
