Ingredients
  

For the Beef

  • 3 pounds Beef Chuck Roast Feel free to use chicken for a lighter option.
  • 2 cups Beef Broth Vegetable broth can be a substitute.

For the Marinade

  • 1/2 cup Apple Juice Vinegar White vinegar works in a pinch.
  • 1/4 cup Fresh Lime Juice Best if freshly squeezed.

For Flavoring

  • 2 tablespoons Olive Oil Optional for searing.
  • 1 large Onion Yellow or white onions work best.
  • 4 cloves Garlic Fresh is best; use garlic powder if needed.

For Spices

  • 2 teaspoons Ground Cumin A cornerstone spice.
  • 1 teaspoon Dried Oregano
  • 2 teaspoons Smoked Paprika Regular paprika can be used.
  • 1 teaspoon Chipotle Powder Adjust according to taste preference.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Black Pepper To taste.
  • 2 leaves Bay Leaves Remove before serving.

For Serving

  • 12 small Warm Tortillas Corn tortillas are ideal.
  • 1 cup Fresh Cilantro Optional garnish.
  • 2 lime Lime Wedges

Directions

  • In a bowl, combine salt, black pepper, ground cumin, dried oregano, and smoked paprika to make the spice rub.
  • Generously coat the beef chuck roast with the spice mix.
  • Place chopped onions at the bottom of your slow cooker, layer with seasoned beef, then add minced garlic and chipotle powder.
  • Pour in the beef broth.
  • Cover slow cooker and set to low heat, cooking for 8 hours.
  • Once cooked, shred the beef and mix it back into the juices.
  • Stir in fresh lime juice before serving, garnishing with fresh cilantro.

Notes

For best results, sear the beef before cooking and marinate overnight for bolder flavor.
