Ingredients
  

For the Chicken Marinade

  • 1 pound Skinless, Boneless Chicken Thighs Swap for chicken breasts for a leaner option
  • 3 cloves Garlic (minced) Can substitute with garlic powder if needed
  • 3 tablespoons Red Wine Vinegar White vinegar works in a pinch
  • 1 tablespoon Lemon Zest Brightens the chicken’s flavor
  • 3 tablespoons Lemon Juice Lime juice can be an alternative but will alter the profile
  • 1/2 cup Greek Yogurt Regular yogurt might change the texture slightly
  • 2 tablespoons Olive Oil A neutral oil can be used but won't have the same character
  • 1 tablespoon Dried Oregano Italian seasoning can substitute if necessary
  • to taste Salt Adjust according to your taste
  • to taste Pepper Adjust according to your taste
  • 1 teaspoon Sweet Paprika Smoked paprika can enhance depth

For Assembly

  • 1 large Potato Can use wooden or metal skewers to cook the chicken

Instructions
 

Preparation

  • Mix together the minced garlic, red wine vinegar, lemon zest, lemon juice, Greek yogurt, olive oil, dried oregano, salt, pepper, and sweet paprika in a bowl until smooth. Coat the chicken thighs thoroughly and refrigerate for 2 to 24 hours to absorb all those wonderful flavors.
  • Soak wooden skewers in water for about 30 minutes to prevent burning. Preheat your oven to 400°F. Cut a large potato in half to stabilize your skewers in the baking pan.
  • Thread the marinated chicken thighs onto the skewers, making sure they are snug but not overcrowded, and place the potato halves in the center of a baking pan to support the skewers.
  • Pour a small amount of water into the baking pan to keep the chicken moist. Bake the gyros for 1 to 1.5 hours, covering with foil after 40 minutes to lock in moisture.
  • Let the chicken rest for 10-15 minutes before slicing. Serve the gyros hot.

Notes

Optional: Garnish with fresh parsley or serve alongside homemade tzatziki for an authentic touch.
