Equipment

  • Baking sheet
  • Parchment paper
  • Basting brush

Ingredients

For the Cabbage Steaks

  • 2 heads Cabbage Go for firm, heavy heads for best texture and flavor.
  • 3 tablespoons Olive oil Can substitute with avocado oil for a lighter option.
  • 1 teaspoon Salt Essential for bringing out natural sweetness.

For the Seasoning

  • 1 teaspoon Garlic powder Adds savory depth.
  • 1/2 cup Parmesan cheese Grated; feel free to use a vegan alternative.
  • 1/2 teaspoon Black pepper Adds a touch of heat.

Optional Garnishes

  • 2 tablespoons Fresh parsley Chopped, for garnish.
  • 1/2 teaspoon Red pepper flakes For a spicy kick.

Instructions

Making the Cabbage Steaks

  • Start by removing the stem ends of the cabbage heads. Slice each head in half through the core, then cut into thick slabs about ¾ to 1 inch thick.
  • Line a baking sheet with parchment paper, spreading out the cabbage steaks so they have space between each.
  • Brush the top of each cabbage steak generously with olive oil.
  • Sprinkle the prepared steaks with salt, garlic powder, and black pepper, covering the surface evenly.
  • Grate Parmesan cheese over each steak for maximum flavor infusion.
  • Bake in a preheated oven at 425°F for about 20-25 minutes, until edges are golden brown and blistered.
  • Remove from oven and enjoy hot, garnished with parsley or red pepper flakes.

Notes

Optional: Drizzle with balsamic glaze before serving for added sweetness. For best taste, enjoy immediately after cooking.
