  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle olive oil. Sauté chopped onions and minced garlic until fragrant (about 3 minutes).
  2. Add diced carrots and cook for an additional 5 minutes.
  3. Stir in rinsed lentils and vegetable broth; bring to a boil. Reduce heat to simmer for 20 minutes.
  4. Season with salt, pepper, and freshly squeezed lemon juice.
  5. Fold in fresh spinach until wilted (about 2 minutes).
