Ingredients
  

For the Batter

  • 1 lb Squid tubes cleaned and cut into rings
  • 1 cup All-purpose flour can use gluten-free flour
  • 0.5 cup Corn starch for crispy texture
  • 1 tsp Baking soda for airy batter
  • 1 large Egg white can use an egg replacer
  • 0.5 cup Water adjust for batter thickness
  • 1 pinch Salt

For Cooking

  • Oil for deep frying neutral oil with high smoke point
  • Oil for stir-frying

For Toppings

  • 2 Tbsp Chopped scallions or substitute with green onions
  • 1-2 Tbsp Chopped red chilies adjust based on spice tolerance
  • 1 tsp Ground white pepper can swap with black pepper
  • To taste Salt for seasoning

Instructions
 

Preparation and Cooking

  • Rinse the squid tubes under cold water, then pat them dry. Cut them into rings about ½-inch thick.
  • In a mixing bowl, combine all-purpose flour, cornstarch, baking soda, and a pinch of salt. Whisk in the egg white and enough water until the batter is smooth and thick.
  • Gently toss the squid rings in the batter, ensuring each piece is fully coated.
  • In a wok or deep frying pan, heat the oil to 350°F (175°C).
  • Fry the coated squid rings in small batches for 2-3 minutes until golden brown.
  • Transfer the squid onto a plate lined with paper towels to absorb excess oil.
  • In a separate skillet, add a splash of oil and sauté the chopped scallions and chilies for about 30 seconds until fragrant.
  • Toss the fried squid with the sautéed scallions and chilies. Finish with a sprinkle of salt and white pepper, serving immediately.

Notes

Serve with sweet chili sauce for an extra burst of flavor. Best enjoyed immediately for optimal texture.
