  • 1 tablespoon Ginger Fresh, minced
  • 2 tablespoons Vegetable oil Can substitute with coconut oil
  • 1 tablespoon Fish sauce Substitute with soy sauce for vegetarian
  • 1 tablespoon Brown sugar Or coconut sugar

For the Crispy Shallots

  • 2 medium Shallots Thinly sliced
  • 1 cup Panko breadcrumbs For additional crunch

Cooking Steps

  • In a bowl, combine coconut milk, red curry paste, minced garlic, minced ginger, fish sauce, and brown sugar. Whisk until smooth.
  • Add the deveined shrimp to the marinade and refrigerate for 20-30 minutes.
  • If using wooden skewers, soak them in water for about 15-20 minutes.
  • Preheat the grill to medium-high heat.
  • Thread the marinated shrimp onto the skewers, leaving space in between.
  • Grill the skewers for about 2-3 minutes on each side until the shrimp is pink and opaque.
  • Fry the shallots with panko breadcrumbs in oil until golden brown, about 3-5 minutes.
  • Serve the skewers hot, topped with crispy shallots.

Notes

Serve with a wedge of lime for an added zing, and consider garnishing with fresh herbs like cilantro or basil.
